Vegetarianism and non-vegetarianism is not about health and longevity alone. Its about Dharma and Adharma.
For example, in other spheres of life, also we see that the most anti-vedic asurs living the most luxurious lives with glory and fame. Take the example of crooked politicians, vulgar cine artists, celebrities etc.
Does that mean the Vedic path is wrong? No, not at all. Because what we observe here is only a short momentary glimpse of only few decades/centuries in the infinite time span of "anadi to anant" (beginningless to endless). However if we look at the entire cycle of this infinite time span, we can reason out why certain acts are considered wrong despite all the luxuries they bring, and why certain things are correct.
The concept of vegetarianism is primarily hinged to the concept of ahimsa - which is the foundation of all efforts that we put/or are supposed to put towards getting Mokhsha (the sole objective of life and srishti). So regardless of all health, fitness that it claims to bring, one should never get into meat/egg eating etc in any form. Because that defies the very basic purpose of our existence blatantly. So wonderful is God's creation, that He has built all laws of nature as per this objective. Thus, we find that mind will waver during meditation if one eats meat/egg etc. Not to mention the structure of our body and jaws. There will be feeling of guilt or confusion over justifying meat eating in any form. Such confusions are again obstacles to path of Yoga.
Also from longevity perspective, the objective of vedas is not to live merely a long life, but a long life that is dedicated to fulfilling the purpose of living. Its better to have a short but vedic life than a long life that is built on most anti-vedic practices (Violence on innocent creatures). The longevity of Japanese is not because of fish they eat (as claimed by proponents of meatarianisms), but due to other healthy practices that they follow. This is like saying that Europeans and Americans are developed because they drink and live a promiscous life!! For sure, if Japanese get to vegetariansim, their longevity will increase further.
